We all love a tasty salad. Easy to make, with good items, nothing can go wrong. Some people make mistakes, calories too much, greasy dressings or toppings like…tortilla chips.
This salad is the best so far, balance of sweet and savory with amazing items.
Why is this salat good?
All foods here are super healthy.
Tons reasons why is good. Sweet in taste but eat it moderately. They have antioxidants for cancers, like colon, breast, leukemia. Also immunity gets boosted, eyesight too and cholesterol lower.
Same family as the turmeric. Ginger is amazing. The best reasons for ginger are treating inflammation and stopping illness. Also is safe against cancer and Alzheimer’s.
A herb in many cultures for many recipes. Herbs add aroma and taste! Yum! Cilantro is the best and aids in flushing toxins.
Mango ginger salad
- ¼ golden raisins
- 1 cup boiling water
- 3 tbsp virgin olive oil
- 2 tbsp malt vinegar or red vinegar for those off gluten
- 1 tbsp chopped fresh cilantro leaves and stems
- 1 tsp minced ginger
- 1 fresh Thai, serrano or jalapeno chile, stemmed chopped
- 1/8 tsp salt.
- 8 cups mesculin and other baby greens salads, or whole head lettuce. They are cheap and stored easy.
- 1 large firm ripe mango, diced peeled
- 1 medium red bell pepper sliced thinly.
For the dressing, put raisins in boiled water. Then in small bowl. After 30 min they will be soften, drain them. Put them in blender and add vinegar, oil, oregano, chile, salt, ginger. Puree, make smooth mix. 1 tbsp is set aside of dressing.
For the salat, put the greens in a big bowl and toss the remains. Divide in 6 plates, put the mango and pepper in bowl, add the saved dressing and toss. Top with greens in the mango mix. Serve.
This is for 6 servings and goes well with steamed or baked fish like light lunch.
